For this evaluation, the coffee was tasted as an espresso at 91°C (to avoid enhancing bitterness and roughness), with an extraction of 25 ml in 23 seconds. In the cup, a dark hazelnut-brown crema is observed; on the nose, notes of wood and cocoa are perceived. In the mouth, the coffee strongly emphasizes body and bitterness, contrasted by a pleasant sweetness, with a citrus aftertaste. The acidity is barely noticeable.
