Pasta Caccese is produced in Camporeale, amidst the pristine hills of Ariano Irpino, where the wheat is cultivated entirely naturally without the use of pesticides. This high-quality grain is transformed into zero-kilometer, premium pasta. On their farm, they employ the practice of planting legumes such as clover and field beans to prepare the soil, enhancing the natural fixation of nitrogen. Despite their low yield, the varieties of hard wheat grown retain vital characteristics such as high protein content, essential for the pasta's cooking resilience, tenacious and highly digestible gluten, and a typical yellow hue.
Their farm is located in Camporeale, an uncontaminated hill of Ariano Irpino in the province of Avellino, an ideal area for the production of high-quality hard wheat. This wheat is cultivated using traditional methods and ancient seeds, which are low-yielding but rich in proteins, gluten, and fibers. They avoid the use of chemical pesticides, ensuring that the final product is free from glyphosate and similar substances. Aware of the quality of their grain, the company has established an in-house pasta factory, producing dry, bronze-drawn pasta that is healthy, genuine, and of high quality, thus ensuring a unique and zero-kilometer product.
