Inspired by the great Fiano of the 70s and 80s of the twentieth century, of great modernity and extraordinary sensorial richness. The result of a particular selection of grapes from the Montefalcione and Manocalzati estates, very different soils, capable of giving balance between freshness and structure, enhancing flavor and minerality. Manocalzati: clayey-calcareous soils of medium texture. Montefalcione: sandy, loose, volcanic soil. Average altitude of 550 masl. Espalier training system with guyot pruning. Average planting density of 4,000 plants / ha. Yield of about 60 q / ha and 1.5 kg / vine.

Half October. Manual harvest.
VINIFICATION AND AGING
Classic vinification in steel at a controlled temperature (16 ° -18 °). Aging on whole fermentation lees for about 24 months, in order to gather remarkable qualities of flavor and longevity. The malolactic fermentation rounds off its profile, giving it softness and persistence. About 10% of the product ferments and ages in wood (non-first passage barriques) for 12 months. Refine in the bottle for at least 18 months.
