Technical Notes: The minerality of the volcanic soil allows the production of fresh, acidic sparkling wines with elegant but decisive aromas. The early harvest at the end of August allows for a high acidity. The manual harvest is followed by a cryomaceration, then continuing the fermentation in steel for 12 days. The refermentation takes place in an autoclave and lasts for 4 months, followed by a 60-day rest in the bottle.
